Modified Amish Applesauce Cake


What You’ll Need:

  • 1/2 cup light brown sugar sugar
  • 1/4 cup honey
  • 1 stick unsalted butter, softened
  • 2 eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups applesauce
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup Aronia berries

    What To Do:

    Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with butter.

    In a large bowl, cream sugar and shortening with an electric beater on low speed. Beat in the eggs, one at a time. Add flour, cinnamon, baking soda, and salt; beat until well mixed. Add applesauce and vanilla; mix well then stir in the walnuts and berries and pour batter into prepared baking dish.

    Bake 30 to 35 minutes, or until wooden toothpick inserted in center comes out clean. Let cool.


    For a fancier treat, drizzle with a glaze that’s made by mixing 1/2 cup confectioners’ sugar and 1 to 2 teaspoons water.


    Make frosting:

    Beat cream cheese, butter, and vanilla with an electric mixer at high speed until fluffy. Sift confectioners sugar and cinnamon over cream cheese mixture, then beat at medium speed until incorporated.

    Spread frosting over top of cooled cake.


    Cool completely. Decorate with grated orange peel and dust with confectioners’ sugar before serving.
